It is firm and slightly grainy with a nutty, black pepper flavor kick, similar to Pecorino Toscano. It is herbaceous with grassy notes and becomes more tangy as it ages. It’s a great companion to many wines but mostly you’ll love it with a Mencia from Bierzo or Tempranillo.
